Sustainable Agriculture to “Break Bread” at Cal Poly

SAN LUIS OBISPO – San Luis Obispo’s Tolosa Winery will be the backdrop for a unique gathering in support of Cal Poly’s Sustainable Agriculture Resource Consortium on Sunday, June 3.

The event, dubbed “Break Bread,” will run from 3 to 5:30 p.m. as a tribute to the importance of grains, according to Hunter Francis of Cal Poly’s SARC. After a brief presentation, attendees will have the opportunity to sample fresh local bread, artisan California cheeses, olives, preserves, and a selection of Tolosa wines.
The afternoon will also provide an opportunity to learn more about Cal Poly’s sustainable agricultural initiatives.
Food ethnologist Lorenz K. Schaller will present a slideshow illustrating the profound relationship between humanity and cereal grains. Formerly a staff member at the California Institute of Technology, Schaller studied and has taught the nutritional, culinary, and ecological significance of biodiverse seed crops for decades. Schaller founded The Kusa Seed Research Foundation in 1980 and The Kusa Seed Society in 1986, both nonprofit organizations that aim to raise public awareness about the values inherent in ancient seeds and grains.
Break Bread will feature baked goods from one of San Luis Obispo County’s finest bakers, Ciro Pasciuto, who recently opened Paso Robles-based Skipping Stone Productions. The company offers catering and bread for special events.

Pasciuto was born and raised in an Italian fishing village, where he learned the value of using fresh local foods. In 1989 he launched La Panzanella Bakery in Seattle, becoming a leader in the artisan food movement. In the late ’90s, he developed Croccantini, a cracker that received national recognition from the National Association for the Specialty Food Trade.
